Cajun Turkey Quarter-Pounder

Phase: 2
Preheat Oven: Broil
Cooking Time: 10 minutes

2 lb. ground turkey
1/2 medium green bell pepper, cored, seeded and finely chopped
3 oz white mushrooms, shredded (about 1 cup shredded)
1 egg
2 T dry unseasoned whole wheat bread crumbs
2 T no-sugar-added ketchup
1 T dried minced onion
2 t Cajun seasoning
1 t garlic powder
2 whole-wheat pitas, cut in half crosswise
4 slices tomato
4 slices red onion
pickles (optional)

1. Heat broiler. Spray a broiler pan with nonstick cooking spray.

2. In a large bowl, mix together turkey, green pepper, mushrooms, egg, bread crumbs, ketchup, minced onion, Cajun seasoning and garlic powder. Form into 4 burgers about 3" in diameter.

3. Place burgers on the prepared broiler pan and broil for about 5 minutes per side or until internal temperature reads 160 degrees on an instant-read thermometer.

4. In each pita half, place a burger, a slice of tomato and a slice of onion. Serve with additional ketchup and pickles, if desired.

For phase 1 people, you can easily eat just the burger without the pita - this amount of bread crumbs would be an allowed
