1 can kidney beans, well rinsed 1 can chick peas, well rinsed 1 can diced tomatoes 1 can tomato paste 1/4 C dehydrated onions 1 T diced garlic in olive oil 1 bell pepper, diced fine 1 C shredded spinach Cajun spice mix to taste Chili powder to taste Black pepper to taste
Make sure all ingredients are sugar free and try to find salt free tomato products. Mix all ingredients together and simmer for 1/2 hour. Tastes better if it can sit overnight before serving.
Options--
1. Sprinkle w/ shredded cheddar cheese
