2 pounds beef stew meat (cut in small pieces, or just let it fall apart as it gets tender) 2 Tablespoons olive oil 1 large onion, chopped coarsely 2 cloves garlic, minced 1 bay leaf pepper to taste beef base concentrate 1 gallon water 1 cup pearl barley 3 celery stalks, sliced thin 12 oz. mushrooms, sliced 1 small can tomato paste, optional
Using a soup pot, brown meat in olive oil. Add garlic and onion. Cook until all meat is brown.
Add water, bay leaf, pepper, and enough concentrated beef base to taste. You should have a rich brown broth. (I guess you could also read the directions on the container and adjust it to a gallon of water.)
Bring to a boil, reduce to simmer, and cover. Cook 2 hours.
