Phase: 2 Preheat Oven: 350
6 split chicken breasts (with bone) 1/2 box Uncle Sam wheat flakes/flaxseed cereal 1/2 tsp. paprika 1/2 tsp. garlic powder 1/4 tsp. chili powder 1/4 tsp. black pepper 1/4 tsp. salt 1 cup skim milk canola oil spray (or other baking spray)
Preheat oven to 350. Spray large baking dish w/canola oil.
Remove skin and excess fat from chicken breasts. Rinse in cold water.
In large Ziploc-type baggie, pour half (approximately) box cereal. Crush with implement of choice (I used a rolling pin) until small crumbs. Add all seasonings and shake well.
Pour skim milk into small bowl. Dip each breast in milk (the chicken's, not yours), then place in cereal crumb bag and shake until coated. Place bone-side down in baking dish and bake for one hour. If breasts are large (the chicken's, not yours), cook for an extra 15 minutes. (Cut open one piece to make sure it is done!)

Comments: I actually created a recipe today! woo hooo! I've been missing good ol' fried chicken and this was my attempt to make a SB friendly alternative. It's fantastic!
