Chick-pea Soup

2 T. olive oil
1 large onion chopped
2 or 3 bell peppers (1 each green, red, and yellow), chopped
1 rib celery with leaves, chopped
1 t. finely chopped fresh gingerroot
2 cloves garlic, peeled and finely chopped
1 bay leaf
1 T. sweet paprika
1/8 t. ground cinnamon
pinch of saffron threads
pinch of nutmeg
6 cups vegetable or chicken stock
2 medium sweet potatoes peeled and diced
1 1/2 t. dried basil
1 1/2 t. dried summer savory
1 can (15 oz) whole tomatoes with juice, coarsely pureed
2 t. honey
2 c. cooked chick-peas
8 oz greens, such as turnip greens and spinach washed and thinly sliced (optional)
1 T. soy sauce
Salt and black pepper to taste

In a 10 inch skillet, heat the oil. Add the onion and sauté til softened. Stir in bell peppers and celery and sauté 2 minutes more. Add the ginger, garlic, bay leaf, paprika, cinnamon, saffron (crushing the threads between your fingers), cayenne, and nutmeg. Sauté 1 minute more and transfer to a large pot.

2. Add the stock, sweet potatoes, basil, and savory to the pot. Bring to a boil then lower heat to medium-low, and add the tomatoes and honey. Let simmer, covered about 10 minutes. Stir in the chickpeas and heat through, then add the greens. Cook covered 5–10 minutes. Season with soy, salt and pepper.
