Broccoli Cauliflower Salad

2 c broccoli florets, finely chopped
2 c cauliflower florets, finely chopped
2 T sweet onion, chopped
4 pieces dried apricot, chopped (a quick job in a mini food processor)
2 T roasted sunflower seeds or chopped nuts
1/4 c lite mayonnaise
2 T white vinegar
2 packets sweetener

Mix broccoli, cauliflower, onion, apricot, and sunflower seeds in large bowl. In a separate bowl, mix mayo, vinegar, and sweetener until well-blended. Add to bowl containing other ingredients, mix well to coat. Store in tightly-covered container in refrigerator. Makes 4 cups. Keeps well for several days. It is better the 2nd day, in my opinion, because the apricots get softer.
