Baked Veggie Chicken

Phase: 1
Preheat Oven: 350

Chicken breasts
Onions, sliced
Eggplant, sliced
Zucchini, sliced
Squash, chunked or sliced
2 small cans diced tomatoes
Salt & pepper, to taste
Herbs, as desired

Place the chicken in a baking pan. Slice enough onions to completely cover them. Slice your favorite vegetables (I use eggplant, zucchini, and squash) and spread over the top of the onions. Spread the diced tomatoes over all the veggies in the pan. Season everything and place in the oven at 350 degrees until the chicken is cooked. I let mine cook at least an hour and a half that way the veggies are nice and tender too.

Comments: I'm going to substitute fish for the chicken this weekend. I'm going to cook the vegetables first since they take longer to cook. Once I see that they are almost done, I'll add the fish. I'll let you know how it turns out this weekend.
