1 pkg of 15 bean soup 1lb of turkey bacon chopped into one inch pieces 1/2 lb of legal ham (I used a ham steak) chopped into bite size cubes 2 cloves of garlic minced 1 large onion 2-3 carrots 1-2 parsnip 2 cans of chopped tomatoes 3-4 celery stalks seasonings
Soak the beans overnight. Cook the bacon until mostly done in the bottom of your soup pan. Add the ham and cook another minute or so. Add the garlic, onion, carrots, parsnip and celery, beans and water (I used the amount on the back of the soup bag). Bring to a boil and then turn down heat and simmer for 2 and 1/2 hours.
Add tomatoes, and seasonings (I added chili powder, garlic powder and black pepper) as listed on the back of the soup packet. Simmer for another 30 to 45 minutes. Check at end and add salt if needed or any other spices you like to season your soups with. Submitted By: Meg

Comments: I tried this recipe the other day and I really like it. I played around with the instructions on the back of the bag as to give the soup more flavor and it came out really tasty. I do NOT add the ham flavoring packet as it does not have a good taste to me. The bacon really helps flavor the soup. I like this because it is a great source of protein and really filling.
