Suggestion: Use frozen carrots already cut up and partially cooked to make the dish even easier and faster. Mashed Cauliflower with Cheese and Dill Cauliflower cooked like this is a perfect side dish for any phase of the South Beach Diet, or any low-glycemic eating plan.
Editor says: Do not over-indulge since there is quite a bit of cheese in it. (All too easy to \'eat the whole thing\', in my opinion!) You can easily substitute an equal amount of regular green beans. I did use runner beans...had to ask which they were at farmers market!
Made this recipe for Sunday evening dinner for Dad who joined me and it was just delicious...from this months Cooking Light Magazine. We had it with marinated pork tenderloin and a veggie au gratin (all farmers mkt stuff). He even loved it...and he is a die hard southern cook who cooks his green beans to death with ham....lol! Spinach Pie Rachel (nutritionist) said about 1/4 of this pie would count as one vegetable and protein portion. This recipe came from another beacher several years ago, who didn\'t post it but gave me (someone else besides me, lol) permission to post it on the Nutritionists\' board to make sure it was acceptable.
